Cinnamon Sugar Blondies

Ingredients

  • 120 g unsalted butter melted and cooled to room temperature

  • 180 g brown sugar

  • 1 egg cold (straight form the fridge)

  • 1 tsp vanilla essence

  • 150 g all purpose flour

  • 1/2 tsp salt

πŸ’—Centre:

  • 50 g unsalted butter (soft, at room temperature)

  • 100 g brown sugar

  • 1 tsp ground cinnamon

πŸ’—Sugar top:

  • 2 tbsp sugar

  • 1 tsp ground cinnamon

Directions

πŸ’—For the cinnamon centre:

  1. Mix the butter with cinnamon and sugar until you get a smooth paste.

πŸ’—For the blondie:

  1. Whisk together the butter, brown sugar and egg until paler in colour. You can also use an electric mixer.

  2. Add the vanilla essence, flour and salt and incorporate using a spatula.

  3. Line a 20x20cm mould with baking paper and pour half the blondie mix in. Level using a spatula and then spread out the cinnamon centre on top. Spread the second layer of blondie dough on top and sprinkle with the cinnamon sugar mix.

  4. Take to a preheated oven at 180C for 15min
