Sweet Heat Honey Mustard Chicken Pasta

- 8 oz pasta (penne or fusilli)
- 1 lb chicken breast, diced
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/2 cup honey
- 1/4 cup Dijon mustard
- 1/4 cup whole grain mustard
- 1 tsp red pepper flakes (adjust to taste)
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach, chopped (optional)
- Fresh parsley, chopped (for garnish)
Directions
1. Cook pasta according to package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until golden and cooked through, about 5-7 minutes.
3. In a bowl, whisk together honey, Dijon mustard, whole grain mustard, red pepper flakes, and minced garlic.
4. Pour the honey mustard mixture over the chicken in the skillet. Stir and cook for 2-3 minutes until the sauce thickens slightly.
5. Lower the heat and add the heavy cream, stirring to combine. If using, add chopped spinach and cook until wilted.
6. Toss the cooked pasta with the chicken and sauce until well coated. Adjust seasoning if needed.
7. Serve warm, garnished with fresh parsley."
