GRILLED CHICKEN FAJITAS

Ingredients

CHICKEN

¼ cup olive oil, divided juice from 1 lime

3 large boneless skinless chicken breasts, butterflied

1 each red, yellow, and orange peppers

1 medium Vidalia onion

a pinch of salt

12 small soft flour tortillas

SEASONING

1½ Tbsp. chili powder

2 tsp. ground cumin

2 tsp. kosher salt

2 tsp. smoked paprika

1 tsp. ground cinnamon

1 tsp. onion powder

1 tsp. garlic powder

1 tsp. cayenne pepper

½ tsp. white sugar zest from 1 lime

Directions

  1. Light grill and set up for medium-high direct heat.

  2. Combine all the seasoning ingredients into small bowl and whisk together.

  3. Whisk 2 tablespoons olive oil and the lime juice together in medium mixing bowl. Add butterflied chicken breasts. Toss to evenly coat.

  4. Evenly sprinkle seasoning on both sides of chicken, ensuring uniform coverage.

  5. Thinly slice peppers and onion.

  6. In a large mixing bowl, toss sliced vegetables with remaining 2 tablespoons of olive oil and a pinch of salt.

  7. Using a grill basket, grill vegetables over direct heat until soft and slightly charred. To prevent burning, turn veggies often as they cook.

  8. As veggies near completion, place seasoned chicken on grill over direct heat. Turn every 90 seconds until done.

  9. Remove both meat and vegetables from the grill, slice chicken into thin strips, and keep warm.

  10. Toss flour tortillas on grill for 15 to 30 seconds per side, just to warm them up and slightly toast them. Don't cook them to the point that they are no longer flexible.

  11. Serve hot with toppings of your choice: cheese, fresh limes, sour cream, cilantro, and so on.
