Creamy Tuscan Sausage and Tomato Pasta

12 oz penne pasta
1 lb Italian sausage, casings removed
1 tbsp olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
2 cups heavy cream
1/2 cup grated Parmesan cheese
1/2 tsp Italian seasoning
2 cups fresh spinach
Salt and pepper, to taste
Directions
Cook pasta according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Cook sausage until browned and crumbled. Remove and set aside.
In the same skillet, sauté garlic and cherry tomatoes until softened.
Add heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 2-3 minutes.
Stir in spinach and cooked sausage, cooking until spinach wilts.
Toss in cooked pasta and mix well. Adjust seasoning with salt and pepper.
Serve warm and enjoy!
