One Pan Cajun Chicken Sausage and Rice

Ingredients

1 cup long grain white rice

2 cups chicken broth

4 cajun chicken sausages

1 cup red bell pepper

1 cup green bell pepper

1 cup yellow onion, diced

14oz fire roasted tomatoes

2 garlic cloves, minced

1 tbsp extra virgin olive oil

1 ½ tbsp cajun seasoning

1/2 tsp garlic powder

1/2 tsp sea salt

1/4 tsp black pepper

3 tbsp cilantro

optional: red pepper flakes

Directions

Start by chopping up all of your ingredients: bell pepper, yellow onion, garlic cloves and cajun chicken sausage.

In your pan, add olive oil. Add minced garlic and onion. Saute.

Add bell peppers and continue to saute.

Mix in cajun seasoning, sea salt, black pepper and garlic powder.

Once sauteed in the seasonings for 2-3 minutes, add the chicken sausage. Continue to saute for 3-4 minutes.

Add rice and chicken broth. Mix together. Bring to a boil and reduce to a simmer.

Set timer for 15 minutes and place top on dish.

With 2 minutes left, add can of fire roasted tomatoes and stir.

Broth should completely soak into rice in 15-17 minutes. Remove from the heat and let sit for 5 minutes off.

Top with cilantro. Enjoy!!
