My Gift to You!! Happy Nye Soup: Creamy Sundried Tomato and

Inspired by my internet popular pasta, bc I’m a gorgeous gorgeous soup girl! Ssouppppppp!
1 jar of sundried tomatoes, reserve oil and slice tomatoes into strips.
1 onion, chopped
4 shallots, thinly sliced
2 lemons, zested and juiced
1 tube of sundried tomato paste, I prefer @amorebrand but you can puree a jar if you can’t find this
1lb ground protein, I used 90ish% ground beef
1tbsp basil
1tbsp Italian seasoning
1/2 tsp cayenne/more if you like spice
1/2 tsp red pepper flakes/more if you like spice
2 cups of spinach
important note.. there’s two types of soup ppl.. brothy ppl and creamy ppl. I planned for both.
1 - 32oz for creamy. 2 - 32oz for brothy!!!!
Low sodium chicken broth
2 packages or premade tortellini or homemade (about 20 oz depending how much tort you want)
1cup heavy whipping cream
1 knob of leftover parmesan rind or 1 cup grated parmesan
Garnish:
Fresh parmesan flakes
Roughly chopped parsley
Sprinkle of red pepper flakes
Directions
In a large pot over medium heat, add your oil, onion, shallot, sliced tomato, lemon zest and juice, tomato paste and preferred protein, making sure everything is fully cooked( about 10 minutes), add your remaining seasoning and parm block, add spinach and toss.. (depending on cream/broth soup ppl add as you go. Add tortellini and heavy cream, simmer for 15-20 minutes
Serve with freshly grated parm, parsley and red pepper flakes! #nye #happynewyear2021
