6 Boneless Skinless Chicken Breasts
2 Tablespoons Olive Oil
1 package mushrooms
2 cups Chicken Broth
3 Tablespoons All Purpose Flour
1 cup Heavy Whipping Cream
1 Tablespoon Minced Garlic
1 teaspoon Salt
2 teaspoon Black Pepper
2 teaspoon Italian Seasoning
2 teaspoon Paprika
1/2 c shredded Parmesan cheese
1/2-1 cup red pesto or sun dried tomatoes
4 Tablespoons Salted Butter
Fresh Basil (optional for garnish)
Grated Parmesan Cheese (optional for garnish)
Directions
Brown the chicken breasts in the oil for 2-3 minutes per side. If using chicken from frozen for the instant pot, you can skip this step.
In a small mixing bowl, whisk together the chicken broth and flour. Add this mixture to pot. Add in the minced garlic, salt, pepper, Italian seasoning and paprika. Gently mix to combine these ingredients.
Place the mushrooms and chicken breasts in the instant pot and top the chicken with the pesto and butter.
For instant pot: cook on high pressure for 10 minutes if thawed, 18 minutes if frozen. Let the pressure release naturally. You can take the chicken out and shred it if you like. Stir in heavy whipping cream and Parmesan cheese.
For crock pot: Cover and cook on low for 6-7 hours or on high for 3-3.5 hours until the chicken is cooked through. Stir the heavy whipping cream and Parmesan into the pot for the last 60 minutes if cooking on low or 30 minutes if cooking on higher.
Serve warm over pasta, rice, or stuffing.
