Quinoa Tabboule

1/2 cup white quinoa
3/4 cup or less water
1 tsp canola oil
Bunch of parsley
10-15 mint leaves
1 cucumber
6-8 cherry tomatoes
Salt and pepper
Olive oil
1/2 lemon juice
Directions
Rinse quinoa, put in pot and cook till dry
Add olive oil and stir
Add water
Wash parsley, take out big stems and dry
Wash mint and dry
Chop greens into small pieces
Wash cucumber and chop into strips then cubes
Wash cherry tomatoes and cut into quarters
Take quinoa off heat when no water and color changes
Let cool and mix
Add lemon juice, olive oil, salt and pepper
