Black Bean Salsa - Lori

Ingredients

1 can (15 oz) black beans, drained and rinsed

14 oz frozen corn

1 medium tomato diced

1/2 green pepper diced

1/2 cup diced red onion

1 clove garlic minced

2 tbsp minced fresh cilantro

1/4 cups olive oil

1/4 cup red wine vinegar

2 tbsp fresh lime juice

1/2 tsp salt

1/4 tsp black pepper

Directions

Mix veggies, garlic and cilantro. Add oil, vinegar, lime juice, salt and pepper.

Chill for at least 30 min.

Notes

Serve with grill meats and on shrimp tacos. Adjust to liking and heat if preferred.
