Black Bean Chicken

Ingredients

400 g roasted skinless chicken breast

400 g steamed brocoli

2 medium bell pepper

6 chopped medium carrots

1 chopped onion

2 garlic cloves

1 can organic black beans

125 ml coconut milk

1/2 tsp cumin

1/2 tsp black pepper

1/2 tsp kosher salt

Directions

Brine three chicken breasts with 2 tsp of kosher salt. Refrigerate for min two hours, or up to 18 hours

Roast at 375 F for 36 min or 165 degrees internal temp. 170 for firmer chicken. Allow to cool and cut into medium size cubes.

Steam 2 to 3 cups of brocoli florets until slightly firm tested with a fork.

Chop onion and bell pepper. Peel and press 2 large garlic cloves.

In a slightly oiled stock pot add onion, peppers and garlic. Cook until slightly firm.

Add chicken, coconut milk, salt, pepper, cumin and brocoli. Cook on medium for enough time to fully heat and mix all ingredients.

Combine with a carbohydrate such as brown rice or a vegetable depending on carbohydrate allowance.
