Chicken Chow Mein Noodles

Ingredients
200g chicken thigh fillets , thinly sliced (velvetted)
4 cups green cabbage , finely shredded
1½ T peanut oil
2 cloves garlic , finely chopped
200g fresh Fantastic brand chow mein noodles (Woolworths)
1 carrot , julienned (par boiled 2 min then rinsed under cold water and drained)
1 ½ cups bean sprouts
3 green onions, cut into 5cm pieces
**Sauce**
2 t cornflour
1½ T soy sauce
1½ T oyster sauce
1½ T rice wine
2 t sugar
½ t sesame oil
¼ c water
Directions
Mix together cornflour and soy sauce, then mix in remaining ingredients.
Pour 1 tablespoon sauce over chicken and mix through.
Marinate 10 mins.
Prepare noodles according to packet directions.
Drain and add a little oil to prevent sticking.
Heat oil in wok or large fry pan over high heat.
Add chicken and stir fry until nearly cooked.
Remove.
Add a little oil and fry garlic and stir fry for 10 seconds or until it starts to turn golden.
Add the cabbage and carrot.
Stir fry for 1½ minutes until the cabbage is mostly wilted.
Add the noodles, chicken and sauce.
Stir fry to heat through, tossing constantly.
Add green onions and bean sprouts.
Toss through and cook 30 mins until wilted.
Remove from heat and serve immediately.
Notes
For 4
400g /12 oz chicken breast or thigh fillets , thinly sliced (Note 1 tenderise option)
8 cups green cabbage , finely shredded (Note 3)
3 tbsp peanut oil (or other cooking oil)
4 cloves garlic , finely chopped
400g /12 oz chow mein noodles (Note 2)
2 carrot , julienned
3 cups bean sprouts
6 green onions , cut into 5cm/2″ pieces
0.5 cup (130 ml) water
CHOW MEIN SAUCE:
4 tsp cornflour / cornstarch
3 tbsp soy sauce , all purpose or light (Note 4)
3 tbsp oyster sauce (sub Hoisin)
3 tbsp Chinese cooking wine OR Mirin (Note 5)
4 tsp sugar (reduce to 1 tsp if using Mirin)
1 tsp sesame oil
White pepper (sub black)
