Roasted Garlic Whipped Ricotta (with Smoked Salmon)

1 large bulb garlic
dash of olive oil
pinch of salt
16 oz whole milk ricotta
Juice of one lemon
Salt and pepper to taste
2 cups Cherry tomatoes
1 tbsp olive oil
1/2 tsp Italian seasoning
large pinch of salt
Directions
Roasted Garlic
Preheat oven to 400 degrees. Cut off the top of the garlic bulb to expose bulbs and then remove excess paper. Add a splash of oil and then a pinch of salt. Wrap in foil carefully, making sure none of the oil leaks out and add to the preheated oven. Roast for 30-35 minutes or until garlic cloves are fork tender.
Roasted Tomatoes
On a sheet pan, add the washed cherry tomatoes with the olive oil, salt, and Italian seasoning. Use your hands to make sure they are evenly coated. Roast for 15 minutes.
Ricotta Dip
Once the tomatoes and garlic are done, add the roasted garlic cloves to a large bowl and mash them into a paste like consistency.
Add in the ricotta next and vigorously whip it for 1 minute until it becomes light. Add in the lemon juice as well as a large pinch of salt and pepper and whisk to combine. Taste and adjust seasoning if needed.
Top with cherry tomatoes and a splash of olive oil and more salt and pepper if desired. Serve with pita chips! Enjoy!
