Lemon Rice

2 cups rice
4 cups water (remove 2/3 tsp)
1 tbsp chicken bouillon
3/4 cup celery, chopped
3/4 cup onion, chopped
Lemon zest, to taste
Directions
Preheat oven to 350°F. In a shallow dish, mix rice, water, and bouillon. Bake for 20 minutes. Sauté celery, onion, and lemon zest in butter. Fold into rice and cook 15 more minutes.
