Savory Hash Brown Breakfast Casserole

Ingredients

Eggs, extra large

2 Cups Milk

1/3 Cup Sour Cream

1/8 Teaspoon Ground Mustard

3/4 Teaspoon Salt

1/4 Teaspoon Pepper

1/4 Teaspoon Hot Sauce

1/2 Pound Breakfast Sausage, ground, cooked

2 Cups Cheddar Cheese

1 Cup Colby Jack Cheese

4 Cups Hash Brown Potatoes

6 Tablespoons Oil, divided

Ketchup or salsa for serving

Directions

Heat the oven to 400 degrees.

Spray an 8x9" Baking dish with nonstick baking spray.

In a large mixing bowl, whisk the eggs, sour cream, ground mustard, salt, pepper, and hot sauce.

Add the sausage and cheddar cheese and whisk again.

Pour into a baking dish and bake for 50 minutes.

Meanwhile, heat a large sauce pan over medium heat with half the oil and fry half of the potatoes, turning once after the potatoes turn golden, 8-10 minutes.

Remove to a paper towel lined plate and fry the next batch.

Remove the eggs from the oven and top with the colby cheese and then the potatoes.

Bake for an additional 20 minutes and serve with ketchup or salsa
