Ingredients

1/2 Red Onion, sliced into strips

1 Russet Potato, diced

1 Turnip, diced

8-10 Radishes, diced

2 Pears or Apples, diced

1/2 Squash, diced

3lb Chicken, Duck, or Pork

1 bunch Sage

Apple Cider (optional)

Directions

  1. Preheat oven to 350°F.

  2. Dress choice of meat with olive oil or butter, herbs, salt, and pepper. Suggestion: Herbs de Provence.

  3. Roast meat until nearly done (will depend on size and type of meat, as well as desired serving temperature).

  4. While meat is roasting, dress fruit and vegetable ingredients with olive oil, salt, pepper, and sage. Roast at 400°F for 30min or until fork-tender and beginning to brown.

  5. Once meat is nearly finished (10°F below desired temperature), remove from oven and tent with foil. Allow to rest for 10 minutes.

  6. Place finished vegetables on sheet pan or other serving dish. Place meat on top and garnish with sage.

  7. Optional: use drippings from meat to prepare a gravy by adding 1/2c Apple Cider and a water/flour slurry.
