Saucy Aubergine, Chickpea & Ricotta Bake

400g Drained Cooked Chickpeas
150g Ricotta
150g Mozzarella
30g Parmesan
25g Basil
Mixed Salad Leaf
Directions
Heat the grill to medium-high. Transfer the base to a saucepan and heat through over a medium heat until piping hot.
Mix drained chickpeas and some torn basil through the sauce, then dot with the ricotta and mozzarella before grating over Parmesan.
Top with a few more basil leaves and slide under the grill until golden and bubbling, around 20-25 minutes.

This one couldn't be easier. Take the saucy aubergine batch recipe and mix it with some high-protein chickpeas, before grilling with cheese until golden and bubbly. A midweek winner.
