Chicken Sausage Breakfast Burritos

1 Cup Blended Cottage Cheese (225g)
1.5 Cups Fat Free Cheddar Cheese (168g) Fresh Chives (~10g)
1 Tbsp Garlic Salt (15g)
10 Low Calorie Tortillas (10-inch Carb Counter)
Sriracha Mayo:
8 Tbsps Light Mayo (120g)
4 Tbsps Sriracha (60g)
0.25 Cup Lemon Juice (60g)
0.5 Tbsp Garlic Salt (7g)
Directions
1. Take out about 36 oz. of raw chicken sausage, remove the casings, and cook all of the sausages in a pan. Break into small pieces while cooking.
2. Crack 20 eggs into a clean bowl. Add 1 Cup of blended cottage cheese (or Greek yogurt).Whisk until everything is completely combined.
3. Add the eggs to a pan on low heat and slowly cook them while constantly stirring. When the eggs are 80% cooked, add 1.5 Cups fat-free cheddar, fresh chives, and some garlic salt. Stir it all together until the cheese is melted.
4. In a bowl, combine light mayo, sriracha, fresh lemon juice, and some garlic salt. Mix together tomake sriracha mayo and set aside.
5. Assemble the burritos with a low calorie tortilla, about 1/10 of the eggs, 1/10 of the cooked sausage, and a drizzle of sriracha mayo.
6. Roll everything into a burrito and repeat the process 9 more times to make a total of 10 burritos.Wrap in aluminum foil and store in the freezer for up to 3 months (go to page 6 for reheating instructions.
