Grandma Dolly’s Dumpling Soup

1 tbsp vegetable oil
1 onion (diced)
2 carrots (sliced)
2 ribs celery (chopped)
1 rutabaga (peeled and chopped)
3 -4 cloves garlic (minced)
8 cups chicken stock (homemade)
2 bay leaves
2 cups cooked shredded chicken
Dumplings:
4 eggs
1 1/2 c milk
2 tsp baking powder
1/2 tsp sugar
2-3 cups flour
Salt and pepper to taste
Directions
Sauté onions, carrots, celery, and rutabaga in stock pot. Once softened, add garlic and cook an additional 30s. Add broth and bay leaves. Cook ~45 min until rutabaga is soft.
Add chicken
Mix dumpling ingredients. Flour is last addition, and keep adding flour until batter is tough to stir.
Bring separate large pot of water to a boil. Add dumplings by dropping in 1 tsp of batter at a time. Boil 15 min, then add to soup with a spider/slotted spoon. Remove bay leaves and serve.
