Pancetta-Grilled Asparagus

Ingredients

I pound fresh asparagus

6 ounces pancetta, cut lengthwise

Directions

Trim the bottom inch from each asparagus spear. Wrap each stalk all the way around with the pan- cetta from just below the cool head part to the bottom.

Place on a medium-high grill, grill pan, or under the broiler. Cook until the asparagus has softened and the pancetta starts getting a bit crispy on the edges.

Notes

Pancetta is really just Italian bacon— and I know it sounds like I'm getting all fancy on you, but l'm not. If you can buy packaged salami in the store, you can buy this. But referring to it as pancetta and not bacon will make you feel more worldly.
