No-bake Pumpkin Coconut Energy Balls

Ingredients

1 cup rolled oats

1/2 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup shredded unsweetened coconut, plus extra for coating

1/4 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

2 tablespoons chia seeds or flaxseeds (optional for added nutrition)

A pinch of salt

Directions

Combine Ingredients:

In a large mixing bowl, add the rolled oats, pumpkin puree, shredded coconut, almond butter, honey or maple syrup, vanilla extract, cinnamon, nutmeg, ginger, chia seeds or flaxseeds (if using), and a pinch of salt. Stir well until the mixture is thoroughly combined.

Form into Balls:

Using your hands or a small cookie scoop, roll the mixture into bite-sized balls, about 1 inch in diameter.

Coat with Extra Coconut:

Roll each ball in additional shredded coconut to fully coat them.

Chill:

Place the energy balls on a baking sheet or plate lined with parchment paper. Chill them in the refrigerator for at least 30 minutes to firm up.

Serve and Store:

Enjoy your No-Bake Pumpkin Coconut Energy Balls right from the fridge. Store any leftovers in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
