Lamb and Apricot Stew

1½ pounds boneless lamb stew meat

Coarse salt and freshly ground pepper

1 large yellow onion, halved and thinly sliced

4 garlic cloves, thinly sliced

1 can (14,5 ounces) diced tomatoes

Directions
