I’ve Made My Favourite Pizza Express into Your New Favourite

All done in one dish and perfect to reheat in the microwave when you need it!
200g orzo (dry weight)
364g roast chicken breast
200g light soft cheese
1 chicken stock cube
700ml boiling water
80g reduced fat cheddar
94g reduced fat green pesto
178g red onion (sliced)
40g grated Parmesan
Directions
Add your orzo to a baking dish
Dissolve the stock cube in 700ml water and add the soft cheese into the same jug and mix to combine, then add to the baking dish with the orzo.
Add the pesto, chicken, Parmesan and red onion and combine well then cook for 20 mins at 200C.
After 20 mins, mix well, making sure the orzo isn’t sticking to the dish, top with the cheddar cheese, and return to the oven for another 20 minutes.
Divide into 4 portions and reheat in the microwave when needed (I reheat for about 4ish minutes!)
