Marcella Hazan’s Famous Tomato Sauce

Ingredients

  • 1 (28-ounce) can whole San Mariano tomatoes, no salt or herbs added (highest quality) or 2lbs of ripe tomatoes blanched peeled and cored

  • 70g unsalted butter (5 tbsp)

  • 1 small white or yellow onion, peeled and cut in half

  • 1 tsp Kosher salt and more to taste

Directions

  1. Roughly chop the tomatoes. Cut onion in half and peel.

  2. Place tomatoes in a medium saucepan; add onion, and stir in butter and salt. Cook over medium-low, uncovered, stirring occasionally and mashing any large pieces of tomato using the back of a wooden spoon, until fat floats free from the tomatoes and is incorporated into the sauce as it slightly thickens, 1 hour to 1 hour and 10 minutes. Season with additional salt to taste. Remove and discard onion.

  3. Options with discarded onion.

  • Blend the sauce with the onion (creates a smooth sauce).

  • Rougly dice it and add it back into the sauce.

  • Dice and serve on top of toasted bread.

  • Serve it with other roasted vegetables

  • Make onion butter.

  • Eat it plain. Just don’t throw it away! It’s delicious!
