1 tbsp olive oil
2 cups (300g) cherry tomatoes
2-3 garlic cloves, minced
2 tbsp tomato paste
1 cup (160g) small shaped pasta like tubetti
1 tsp Italian seasoning
2-3 cups vegetable broth (start with less and add more as needed)
1 (15oz) can cooked chickpeas, drained and rinsed
Directions
1. Heat olive oil in a large pot. When hot, add the cherry tomatoes and cover with lid. Cook 10 min until they burst and soften
2. Add garlic and tomato paste, fry for 2 min or until tomato paste has caramelized. Add dry pasta and Italian seasoning, toast everything 1-2 min. Add vegetable broth, cover w/lid, bring to gentle simmer over medium heat.
3. Season w salt and black pepper, simmer for 15-20 min, stir often to prevent burning
4. When pasta absorbs all the liquid and is al dente remove from heat and stir in chickpeas. Serve with fave cheese and drizzle olive oil
