Roasted Tomato Soup & Grilled Cheese

Ingredients

A classic comfort meal that’s souper quick and easy to make

Ingredients & recipes:

5 large tomatoes

1/2 an onion

1 garlic bulb

pinch of salt

freshly ground black pepper

sprig of thyme

2 tbsp olive oil

Roast in 400F oven for 30 minutes

Squeeze out garlic meat & discard skin

Remove stem from thyme

1/2 cup broth

1/4 cup heavy cream

grated Parmesan

1 tsp sugar

1/4 cup fresh basil

Directions

Add everything to the roasted vegetables

Bring to a boil then blend

Optional: add 1-2 tbsp butter for richer toast

Pesto grilled cheese:

8oz unsalted butter, softened

2 tsp pesto sauce

provolone cheese

grated Parmesan

mayonnaise

Mix butter and pesto sauce together until homogeneous

Spread butter mixture on one side of bread

Spread mayonnaise on the other side

Layer on provolone and Parmesan on the side with mayo

Cook on hot skillet on medium low heat for about 4 minutes.

Flip to other side. Carefully press down on sandwich to help cheese melt.
