Thai Tuna Wraps

Ingredients

2 tbsp lime juice

1/2 cup mayonnaise, divided

1 tbsp soy sauce

1 tbsp sugar

3 cups cabbage, chopped

1 medium carrot, shredded

3 green onions, thinly sliced

2 tbsp cilantro

1 (6 oz) can tuna, drained and flaked

6 whole wheat tortillas

12-18 fresh spinach leaves

1 medium red pepper, cut into strips

Directions

In a bowl, whisk lime juice, 2 tbsp mayonnaise, soy sauce, and sugar. Chop cabbage, shred carrot, and slice green onions. Combine with cilantro. Spread 1/2 cup tuna mixture in each tortilla, topped with spinach leaves and red pepper strips. Roll tightly and serve.
