Creamy Courgette Concoction

Directions
Soak cashews overnight or in hot water for 15 mins.
Chop up all veg small, add butterbeans and cook on stovetop. Season to preference.
Make a sour cashew cream: Add cashews to a blender along with ¼ cup + 2 Tbsp fresh lemon juice, ¼ tsp sea salt, 1 tsp nutritional yeast, ½ cup water and blend for 5+ minutes until smooth. You may need more water.
Mix in the cream to the veg, cook for another minute.
Serve with crusty bread.
