Cabbage and Egg Stir Fry

1/4 middle size cabbage (washed, drained completely and then shredded)
2 large eggs (whisked with a small pinch of salt and peper)
2 garlic cloves (minced)
1 thumb ginger (minced)
3 tbsp. vegetable cooking oil (, divided)
1/8 tsp. salt
1/8 tsp. pepper
1 tbsp. light soy sauce
2 fresh small Thai peppers (, cut into circles)
Directions
Wash the cabbage and then hand shred into small pieces. Drain completely.
Whisk two eggs with pinch of salt and pepper.
Heat oil in a pan and pour in the whisked egg. Once the egg starts to firm, break it into small pieces. Transfer out.
Add some extra oil if there is no oil remaining in the pan, fry ginger and garlic until aromatic. Add the cabbage. Fry for around 1 minute until it turns soft.
Return the egg, add light soy sauce, extra salt and pepper as well as the Thai pepper if you are using.
Mix everything well and this quick cabbage and egg stir fry is ready.
