Technicolor Carnitas Corn Tacos

Ingredients

7 oz Rainbow Veggie Mix (kale, carrot, red cabbage)

8 oz Green Chile Sauce

14 oz Pork Carnitas (Butcher’s by Roli Roti)

4 Organic Corn Tortillas

Directions

Heat skillet over med-high; remove bay leaf from pork, then chop into 2-inch chunks; add to skillet + sauté 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp; set aside

Heat 2 tbsp oil in a 12-inch skillet or large pot over med-high + cook veggie mix with salt/pep 3-5 min until tender

Stack 4 tortillas on a plate + wrap with a damp paper towel; microwave 30 sec or until warm + soft

Add pork + veggies to tortillas (or serve veggies on the side!), drizzle on 1-2 tbsp chile per taco, then fold + enjoy!
