Dad's Hummus

Ingredients

1/3 cup good-quality tahini

2-4 tbsp cold water (or more if needed)

2 tbsp olive oil

1/2 tsp ground cumin

3/4 tsp sea salt

2-3 garlic cloves, peeled and smashed

Juice of 1 lemon

1 15oz can of chickpeas, rinsed and drained

Directions

Add tahini, cold water, olive oil, cumin, salt, garlic and lemon juice to a food processor. Puree until smooth

Add in the chickpeas. Puree for 3-4 minutes, pausing to scrape the edges, until hummus is smooth. If too thick add some water

Taste and season with addition salt, cumin, and/or lemon juice if needed.

Serve with a sprinkle of paprika
