1½ lb chicken breasts, cubed (1" cubes. Boneless, skinless chicken)
1 tsp italian seasoning
½ tsp salt & pepper
½ tsp paprika
1 tsp oil (use the sun dried tomato oil)
8 oz dry pasta (penne or ziti. Save 2 cups of pasta water.)
2 Tbsp butter
2 Tbsp all purpose flour
½ tsp dried italian seasonings
½ tsp salt and pepper
2 cloves garlic, minced
⅓ cup dry white wine (*or chicken broth)
2 cups reserved pasta water (use as needed.)
⅓ cup heavy whipping cream (or whole milk.)
⅓ cup sun dried tomatoes in oil, chopped
¼ cup parmesan cheese, fresh grated (more for garnish)
3 Tbsp fresh basil, chopped (for garnish)
Directions
Start the Pasta. Boil a salted pot of water for the pasta and cook it al dente according to package directions.
Cook The Chicken. Season the chicken well. In a large deep skillet, heat sun dried tomato oil on medium high heat. Cook the chicken for about 12-16 minutes turning often until it's cooked through and 165º internally. Set it aside in a bowl.
Make The Marry Me Chicken Sauce in the same skillet the chicken was cooked in. On medium/low heat, melt the butter, add the flour and mix well avoiding clumping. Add in the garlic, seasonings, and white wine or broth, whisk well.
Add the reserved pasta water into the roux, mix it in, add in the cooked pasta, milk, chicken and sun dried tomatoes. Mix well. Add more reserved pasta water if needed, you can also add more milk or plain water to thin the sauce. Add in small increments only if needed.
Bring the sauce to a simmer, add in cheese and basil. Take it off the heat and serve asap. Garnish with extra cheese, chopped sun dried tomatoes and basil if desired. Enjoy with toasted bread or on its own.
