Simple Taco Seasoning

2 tablespoons chile powder (See note 1)
1.5 teaspoons of kosher salt (use half as much if using table salt)
2 teaspoons of oregano (preferably Mexican, see note 2)
1 tablespoon of garlic powder
2 teaspoons of ground cumin
1 teaspoon of sugar
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon of paprika (preferably smoked)
1 teaspoon ground coriander
Directions
1) Add the ingredients to a bowl and mix thoroughly. Store in a sealed container and keep out of sunlight to ensure the flavor of the spices lasts longer.
2) Feel free to adjust the ratios however you want! Too spicy? Add a little more sugar and remove some of the chile and cayenne powder. Want a little more citrus flavor? Add some more coriander powder.
Notes
1. There is a difference between chile and chili powder. Chile powder (with an E) is going to be pure ground peppers of a particular type. Chipotle, ancho, and guajillo are the most common ones outside of cayenne. ChilI powder (with an I) is going to be a mixture of ground peppers with salt and other spices like garlic and oregano. Feel free to use whichever one you happen to have on hand, but if you want a little more control over the flavor opt for the chile powder of your preference.
2. Mexican oregano has a bit of a different flavor than the normal oregano used in many Italian dishes. It is also typically also sold whole, so you will need a mortar and pestle or some other way to grind it before making use of it.
