Buffalo Chicken Totchos

16 oz Frozen Tater Tots
6 slices Bacon, chopped up
8 oz Boneless, skinless chicken breasts or thighs, chopped into bite-sized pieces
1-2 tbsp Hidden Valley Spicy Ranch Seasoning (or any kind of seasoning you like)
3/4-1.5 Cups Buffalo Sauce (any brand)
4 oz Grated Sharp Cheddar Cheese
4 oz Grated Pepper Jack Cheese
Ranch or Blue Cheese Dressing
2-3 Green Onions, sliced (for garnish if desired)
Directions
Preheat the oven to 450 degrees. Place the tater tots on a baking sheet and put them in the oven.
Chop up the bacon and chicken. Season the chicken with the spicy ranch seasoning.
In a skillet over medium heat, cook the bacon until desired crispiness. Remove and set aside and chop it up. Reserve about 1 tbsp of the grease. Cook the chicken in the grease until it is fully cooked.
Pour as much buffalo sauce as you want in the pan and stir well to coat the chicken.
Remove the tater tots from the oven and push them into a pile in the center of the pan. Top with the chicken (and extra buffalo sauce if desired) and the cheeses. Put it back in the oven until the cheese is melted.
Top with the bacon, the Ranch or Blue Cheese dressing and the green onions if desired. Serve hot and enjoy!
Notes
If you don’t like Buffalo Sauce, this would also be good with BBQ sauce or Honey Mustard!
Feel free to top with any toppings that you like. Some good ideas would be jalapenos, black olives, tomatoes or shredded lettuce.
