Chewy Salted Caramels (without Corn Syrup)

Ingredients

1 cup heavy cream

1 cup Grassfed butter

2 cups cane sugar

2 tbsp flaky sea salt

1 tsp vanilla

1/2 cup water

Directions

Brush a 9x9 pan with butter & line pan with parchment. In a small saucepan over medium heat, melt the butter into the cream, stirring continuously until well combined. Remove from the heat and set aside.

In a separate medium saucepan over very low heat, pour 1/2 cup of water over the sugar. Stirring constantly, slowly dissolve the sugar in the water ensuring that the sugar is completely dissolved before it comes to a boil.

Once the mixture has come to a boil, stop stirring & let it boil until the sugar mixture reaches a deep gold color & your candy thermometer is at 350°F.

Do not stir the mixture at all once it has come to a boil.
