No Bake Chocolate Cherry Tart

(Refined sugar free)
Base:
- 2 & 1/4 Cups Almond Flour
- 1/3 Cup Cacao Powder
- 1/3 Cup Melted Coconut Oil
- 3 Tbsp Rice Malt Syrup (or choice of liquid sweetener)
- 1 Tsp Vanilla Extract
- Pinch of Salt
Filling:
- 220g - 230g Dark Chocolate
- 1/2 Cup Full-Fat Canned Coconut Milk
- 1/4 Cup Cherry Juice
Garnish:
- 1/4 Cup Fresh Cherries (Sliced in half & pitted)
- 1/4 Cup Pomegranate Seeds
- Optional to Serve: Coconut Yoghurt & Shaved Dark Chocolate
Directions
1. Grease a tart tin. Mix together all the base ingredients until a dough forms. Roll into a bowl and transfer to the tart tin. Press evenly and set aside in the fridge.
2. Heat coconut milk and cherry juice over the stovetop in a small saucepan. Once boiling, remove from heat and add the chocolate. Whisk until the filling is smooth and fully melted.
3. Pour the filling into the base, garnish with cherries and pomegranate seeds and set in the fridge for 2 - 4 hours.
4. Slice, serve and enjoy! Store in the fridge for 4-5 days, or for longer in the freezer.
