Cheesy Beef 'n' Chorizo Enchiladas

700 g Beef mince
100 g Chorizo
100 g Mushrooms
3 tbsp Paprika
3 Garlic cloves
2 tbsp Italian Mixed Herbs
2 tbsp Chilli powder
5 tbsp Tomato paste
200 g Passata
handful Fresh basil
100 g Passata
75 g Light mozzarella
5 Tortilla wraps
Directions
Step 1
Dice the chorizo and mushrooms in 1cm cubes. Chuck 'em in a frying pan with a little oil, alongside beef mince, garlic, Italian mixed herbs, chilli powder and paprika.
Step 2
Give it a stir and fry for 8 mins. Now the beef mince should've browned.
Step 3
Add in tomato paste, passata and basil - give it a stir and fry for another 5 mins.
Step 4
After 5 mins, turn off the heat.
Step 5
Roll the wraps with the beef and place them beside each other in a baking tray.
Step 6
Top with more passata and then cheese, chuck under the grill until the cheese is crispy.
