Pancake and Sausage Bites

1 pound breakfast sausage
2 cups pancake mix
1 1/2 cup water
1 cup shredded cheese
1/4 cup maple syrup
Directions
Preheat your oven to 400°F.
Add your breakfast sausage to a skillet and cook it over medium heat. Use a spatula to crumble the sausage up as it cooks. Cook it through until there is no more pink left, about 10 minutes.
Once the breakfast sausage is cooked through, remove it from the skillet and set it to the side.
Now combine your pancake mix and water in a bowl and mix it well, careful not to over mix. Next, add in the cooked sausage, shredded cheese, and maple syrup, and fold them in with a spoon until they are just combined.
Spoon about a tablespoon of the sausage pancake mixture into each spot of a mini muffin pan. Then bake the pancake bites for about 10-15 minutes, or until they are golden brown and cooked through.
Continue the baking process until all of the batter is used. This should make about 48 mini sausage pancake bites. Serve with a side of maple syrup, and enjoy!
