Sour Cream Poppy Seed Muffins

Ingredients

**MIX**

1 3/4 c all purpose flour

1/4 tsp baking soda

1/2 tsp salt

1/2 c granulated sugar

3 Tbsp poppy seed

**COMBINE**

1 c (8 oz) sour cream

1 large egg, lightly beaten

1/4 c butter (softened)

2 tsp real vanilla extract

Directions

PREHEAT: Bake to 400 degrees.

1. Combine first 5 ingredients in a bowl. Make a well in the center of the mixture.

2 . In a separate bowl, combine sour cream and remaining 3 ingredients. Add to the dry ingredients, stirring just until moistened.

3. Spoon batter into greased muffin tins; filling 3/4 full.

Bake for 15-18 minutes or until lightly browned. Remove from pans immediately. Cool on wire rack.
