Candied Nuts

Ingredients

2 1/2 cups nuts

1/2 cup water

1 cup sugar

1 tsp cinnamon

1/2 tsp salt

1 1/2 tsp vanilla

Directions

Combine water, sugar, cinnamon, and salt over high heat. Stir with a wooden spoon and cook until syrup reaches 238°F. Remove from heat and beat for one minute until creamy. Add vanilla and nuts, stirring until well coated and crystallized.

Note: Preheat oven to 375°F. Place dry nuts on a 15" x 10" pan and warm in oven for 5 minutes. Turn oven off and leave nuts in oven until ready to pour syrup over them.
