Trejo's Tacos

CHEESY BEAN DIP

Ingredients

1 (16-ounce) can refried beans

½ cup cream cheese, at room temperature

1 cup shredded Mexican-style cheese blend, store-bought or homemade (see this page)

1 tablespoon chopped pickled jalapeños

1 tablespoon pickled jalapeño juice

1 tablespoon crumbled Cotija

Hot sauce, such as Trejo’s, Cholula,or Tapatío (optional)

Directions

Add the beans to a medium saucepan set over medium heat and stir occasionally until they are warmed through, about 5 minutes.

Add the cream cheese a spoonful at a time and stir to combine. Once combined, reduce the heat to low. Add the cheese blend and stir until thoroughly combined and melted. Add the pickled jalapeños and jalapeño juice. Serve hot, garnished with the Cotija and hot sauce, if desired.

Notes

You can use this super simple bean dip in our Breakfast Burrito (this page) or our BCR Burritos (this page), add it to a quesadilla (beginning on this page), or serve it as intended, with tortilla chips and alongside some good salsa. It’s also great served with scrambled eggs and hot sauce.
