Thick and Chewy Peanut Butter Cookies

Ingredients

1/2 cup unsalted butter, softened 🧈

1/2 cup granulated sugar 🍬

1/2 cup light brown sugar, gently packed 🍯

1/2 cup creamy peanut butter 🥜

1 large egg 🥚

1 teaspoon vanilla extract 🍨

1 1/2 cups all-purpose flour 🌾

1 teaspoon baking soda 🍶

1/2 teaspoon salt 🧂

Directions

In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugars until smooth 🧈🍬🍯.

Add the peanut butter, egg, and vanilla extract, mixing well and scraping down the bowl as needed 🥜🥚🍨.

Combine the flour, baking soda, and salt in a separate bowl. Add this mixture to the wet ingredients all at once and mix until just combined 🌾🍶🧂.

Scoop the dough onto baking sheets lined with silicone mats, spacing them evenly 🍪.

Bake at 350°F for 10 to 12 minutes, or until the cookies are just set. Let them cool slightly on the tray before moving them to a cooling rack 🌡️.
