Salt And Pepper Pork

1 lbs of pasture raised, Heritage boneless pork sirloin cutlet (you can also use pork chop)
Marinade
1 Egg White
1/2 tsp sea salt
1/4 tsp white pepper
1/2 tbsp shaoxing wine
Coating
3 tbsp cornstarch
1/2 cup tapioca flour
Avocado oil spray
Str Fry
2 Jalapeño Pepper sliced
2 Scallion whites sliced
4 cloves of garlic (minced)
1/2 shallot thinly sliced
2 Tbsp avocado oil
1/2 tsp salt
1/4 tsp white pepper
Directions
Slice pork chops to 1/4 inch thick and about 2-3 inches long.
Whisk egg white. Add it to the pork along with salt, pepper and shaoxing wine. Massage it and let it marinad for 25 minutes.
Coat the pork, add it to the air fryer without overcrowding and spray a little avocado oil.
375° for 5 mins. Flip and add 3 mins at 400°. Flip again and add another 3 min (until the pork is golden brown and crispy).
In a hot cast iron skillet, add the oil, garlic, jalapeño peppers, shallots, and scallions with salt and pepper and stir fry for 45 seconds.
Add the air fried pork and stir fry everything together.
Enjoy immediately!
