1 lb ground beef (for meatballs)
1/4 cup breadcrumbs
1 egg
2 tbsp olive oil
3 cloves garlic (minced)
12 oz pasta (penne or spaghetti)
1/4 cup butter
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
Salt and pepper (to taste)
Fresh parsley (chopped, for garnish)
Directions
Preheat oven to 375°F (190°C). In a bowl, mix ground meat, breadcrumbs, egg, salt, and pepper. Form into small meatballs.
Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, then transfer to the oven to finish cooking, about 10-12 minutes.
Cook pasta according to package instructions. Drain and set aside.
In the same skillet, melt butter over medium heat. Add garlic and sauté until fragrant, about 1 minute.
Stir in chicken broth and bring to a simmer. Add the cooked meatballs and pasta, tossing to coat in the garlic butter sauce.
Sprinkle with Parmesan cheese and garnish with parsley. Serve hot.
