GRILLED HONEY, GARLIC, AND GINGER SHRIMP

2 lb. extra-large shrimp, peeled and deveined
½ cup olive oil
2 cloves fresh garlic, minced
½ medium shallot, minced
¼ cup honey
4 tsp. ground ginger
1 tsp. dried dill
Directions
Heat olive oil over medium heat and add shallot and garlic. Cook for 3-5 minutes until shallot becomes translucent.
Add in remaining ingredients, minus the shrimp, and heat for 2-3 minutes. Remove sauce from heat, divide in half, and let cool to room temperature.
Light grill and set up for high direct heat.
Toss shrimp with half of sauce, coating the grily and place quirement; you an aiso use skewers, but you'll need one or the other, because shrimp tend to fall through the grates of a standard grill.
Place grill grate directly over heat on grill. Allow shrimp to cook for 3 minutes, leaving lid open.
Turn shrimp and baste with remaining sauce, close lid, and allow to cook for 5 minutes.
Remove from grill and serve hot.
