Artichoke "Crab" Cakes

Ingredients

14 ¾ oz artichoke hearts

⅓ corn

1 cup italian-seasoned breadcrumbs

½ cup lemon tartar sauce

1½ tablespoons chia seeds

Directions

Place chia seeds and about 3 tablespoons water in a large bowl. Sir to combine. Let soak about 5 minutes, or until water is absorbed.

Strain and rinse artichoke hearts. Place artichokes and corn in a food processor. Pulse artichokes and corn for a few seconds to form rice-size pieces.

Add Italian-seasoned breadcrumbs and 3 tablespoons of the lemon tartar sauce to bowl with chia seeds. Stir to combine. Add artichokes and corn. Mix thoroughly for about 1 minute. Let mixture set at least 5 minutes.*

Form artichoke mixture into six patties, about ½-inch thick.

Heat about 1½ tablespoons cooking oil in a large nonstick pan over medium heat. Once pan is hot, add patties. Cook 4-5 minutes on each side, or until evenly browned
