here’s everything you need:

1 tbsp olive or avocado oil

1 yellow onion, finely diced

1 red bell pepper, diced

1 green bell pepper, diced

1 lb ground italian chicken sausage or italian pork sausage

6 eggs, beaten

1 cup + 1/2 cup shredded mozzarella cheese

1 + 1/2 cups almond flour

1/3 cup coconut flour

2 tsp baking powder

2 tsp dried oregano

1 tsp dried basil

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/4 tsp red pepper flakes

Directions

preheat oven to 400 degrees and line a large sheet pan with parchment paper.

heat the oil over medium heat in a large skillet, then add the diced onion and cook for 3 to 5 mins, stirring occasionally. add the red and green bell pepper and continue sautéing for another 3 to 5 mins, until the onions are translucent.

clear the center of the skillet and add the chicken sausage. fully cook and brown all over, breaking into small pieces as it cooks. remove from heat and set aside to cool.

in a large mixing bowl, whisk the eggs, then add one cup of the cheese and the chicken sausage mixture. stir to combine.

add the almond flour, coconut flour, baking powder, and spices and mix until the wet and dry ingredients are just combined.

use a cookie scoop or spoon to shape into 12-14 evenly sized balls. rub a bit of oil in clean hands and shape into a biscuit shape; pressing down on each one. top with the remaining cheese.

bake for 12-15 mins, until golden brown on top. let cool completely before enjoying. store in an airtight container in the fridge for up to 4 days or in the freezer for a month.

I like to reheat in the airfryer on 325 for 4 mins from fridge, 8-10 min from freezer!
