Very Chocolate Ice Cream

1 1/2 cups Sugar
2 cups Whole Milk
1/2 teaspoon Salt
4 tablespoon Unsweet cocoa powder
6 large egg yolks Lightly Beaten
4oz Semisweet chocolate, chopped
4 cups Heavy Whipping Cream
2 teaspoons Pure Vanilla Extract
Directions
1. Combine sugar, salt, milk, and cocoa powder in a saucepan over medium heat, stirring constantly. Bring to a simmer. Place the egg yokes into a small bowl. Gradually stir in about ½ cup of hot liquid and return to saucepan. Heat until thickened but DO NOT boil. Remove from heat and stir in the chopped chocolate until chocolate is melted. Pour mixture into a chilled bowl and refrigerate about two hours until cold, stirring occasionally.
2. When chocolate mixture is completely cooled, stir in the cream and add vanilla. Transfer to an ice cream maker and follow manufacturer's instructions
