    Tropical Smoothie Kale Apple Slaw Recipe

    Ingredients

    4 tablespoons of maple syrup

    2 tablespoons of Dijon mustard

    1/4 cup of apple cider vinegar

    12 cups of curly kale (a tapestry of vibrant green)

    1 thinly sliced red onion

    4 carrots (shredded)

    3 cloves garlic (finely minced)

    2 cups of thinly sliced red cabbage

    2 apples (thinly sliced)

    2 cups of sunflower seeds

    1/2 cup of extra-virgin olive oil

    1 teaspoon each of Kosher salt and freshly ground black pepper

    Directions

    Whisk together the maple syrup, mustard, garlic, vinegar, olive oil, salt, and pepper in a large bowl until well blended.

    Add the red onion, kale, carrots, cabbage, and apple to the dressing and mix until everything is coated.

    Sprinkle the sunflower seeds or nuts on top of the slaw and mix until everything is evenly distributed.

    Refrigerate for at least 30 minutes before serving.
