Peanut Butter Popcorn

Ingredients

½ cup Belden Barns popcorn kernels (approximately 12 cups popped)

2 Tbsp coconut oil (or other neutral oil)

½ cup honey

⅓ cup sugar

½ cup peanut butter

1 tsp salt

½ tsp vanilla extract

Directions

Pop the popcorn in the coconut oil and set aside in a large bowl, removing any unpopped kernels.

Heat honey and sugar over medium heat, stirring until the sugar dissolves - about 5 minutes. Stir in peanut butter as well as salt and vanilla until smooth.

Pour over the popcorn, stir briefly to mix and spread on a parchment-lined baking sheet to cool. Enjoy!

Notes

This recipe tastes remarkably like a soft caramel corn but without the need for a candy thermometer.

After tossing the popcorn with the peanut butter, you can add a handful of salted peanuts to up the nutty factor or just sprinkle with a little sea salt to bring more of that kettle corn sweet/salty effect.
