Ingredients

  • 6-7 Egg yolks

  • 80g ish Pecorino Cheese (grated)

  • Pistachio 200g (whole aldi packet de shelled)

  • Pepper

  • 500g of pasta

  • Guanciale (or pancetta)

Directions

  1. make the pistachio paste in a powerful food processor

  2. cook guanciale until crisp

  3. boil the pasta

  4. Whisk 6 egg yolks with pepper. Add the pistachio paste and pecorino cheese and mix it.

  5. Incorporate a bit of the cooking water to cheese mix. (let water cool down)

  6. add the pasta to guanciale

  7. Pour over he sauce over the pasta and mix

  8. Place the pasta on a plate and sprinkle with chopped pistachios
